Ideal cookware!

First off, I am a very experienced cook, and have used all manner of cookware and ranges over my almost 70 years. The only reason for this purchase is my former stainless cookware would not work on my new range. I will be moving soon, and the new house is all-electric, so I am purchasing an induction range, which requires magnetic cookware.
That said, these pans do an excellent job. They are heavy, cook evenly, and as a bonus have glass lids to watch the action. (I just don't get the solid lids in the All-Clad line.) Hand washing and BKF keep them sparkling and like new.
I have to believe the negative comments come from young inexperienced cooks or those who are impatient by nature. Even persons coming off using non-stick understand, or SHOULD, that you don't use high heat... unless needing to quickly boil a large pot of water! To saute: heat your pan, on medium at most, and hold your hand over the pot, off and on, to sense the warming. When quite warm, place a little oil in the pan, and spread it around with a paper towel or silicon baster. Then add your food, perhaps with more oil, or some butter when cooking eggs, and lower the temp.
With electric smooth-top or coil, you need to anticipate and lower heat sooner since there is not instant control as with gas. But the whole process requires thinking about what you are doing and being patient.
One does not turn on the ignition in the car, then floor the gas pedal to back out of the garage! Similarly, if a cook is not willing to use excellent tools properly, they might as well buy the cheapest aluminum set available at a discount store and be done with it.
Used correctly, this cookware is a true gem...

Beautiful Cookware my Mother Envies

We received this set over a year and a half ago and wouldn't trade it for the world. My sister-in-law received the same set for her wedding three years ago and inspired us to register for it. This beautiful set is perfect for all cooking needs. The only problems I've had is adjusting to non-nonstick. I keep a small nonstick skillet for eggs and such but use it less and less each week. The Emeril set is just as easy to clean once we figured out some stainless tips (i.e. after cooking, simmer water or lemon juice in the pan for a few minutes to loosen up burnt food). I've never had trouble with tipping or major discoloration other than what is normal for stainless cookware--which, when used properly happens and when cleaned properly is simple to remove. My mother came to visit and saw the set in action for the first time this weekend and she couldn't get over how beautiful they were and how well they cooked. We'll be looking into another set for her for Christmas!

I switched from non-stick to this stainless set almost a year and a half ago. I've cooked with some piece of this set nearly every day for the past year and a half, and I love it. There is DEFINITELY a learning curve when learning to cook with stainless. After googling some cooking tips, I get much better cooking/food not sticking results. Some of the most useful tips for me were to preheat the pan, then add your oil/butter then food. NEVER use heat higher than med-high. Medium to medium-low work incredibly well with such amazing heat distribution.
As far as the reviews about the small fry pan tipping over, I don't see how that is even possible on this set., unless possibly you're stovetop has uneven burners or isn't level?? These pans are HEAVY, and even though the handles are heavy-duty, too, the pan itself is heavy enough to keep from tipping. Some of the reviews also talk about a tarnishing or browning effect...this can happen on the outside if your heat is too high, or sometimes there's a color change inside if you cook food that's very acidic or salty. However, a little bit of Bar Keeper's Friend cleaning powder will help you shine them right back to new looking again! Every time my husband and I use it we're amazed! We hand wash our pans, but cleanup is easier than I thought it would be. There's rarely any scrubbing necessary unless the pan didn't get properly heated. (This doesn't happen when I cook. :) ) Overall, I love these pans and recommend them. I definitely supplement with a non-stick griddle style pan for pancakes and grilled cheese, and a 12 inch non-stick would be nice for the rare occasion I want to cook a frozen skillet meal.

Disappointed

Although this wasn't the worst cookware I've ever owned, I was very disappointed with the quality. For the price, I'd at least expect a little better of a product: the pans were light and flimsy, the pans often tipped over easily when cooking (dangerous!). I was really hoping this cookware would work out, but I would much rather pay a little more for a much higher quality of product.

We received this set through our wedding registry. My husband loves stainless steel and for me, it was the first time I tried cooking with stainless steel.
PROS:
*heats up evenly
*can be cleaned even when I burn food HORRIBLY (I've done this 2x already, leaving the pot on the stove and forgetting about it!)
*good variety of sizes for just the two of us or for small gatherings
CONS:
*agree with others, the small pan does tip
*these pots do take awhile to heat up at first (but then it continues to get hot very quickly, which i like)
*i need to go to other pots when i have more people over
because of my cons above, i am giving this set 4 stars. one other reviewer said that food gets burned and a lot of oil needs to be used...i experienced the same at first, but for me, it was user error. i needed to learn how to cook with stainless steel.
for cleaning, i use Bar Keeper's Friend (powder version) and just a sponge or steel wool for the tougher stuff

My husband and I actually registered for a more expensive set but received this set by Emerilware a few months ago as a wedding present instead. We are extremely happy with this set. It looks great, cooks evenly, and is easy to maintain. All of the pieces seem to be very well made, and we have not had any problems with any of them. I'm hoping to buy some additional pieces from this collection. I would highly recommend this set to any of my friends and family.

I made the decision to switch from non-stick to stainless steel for the usual health reasons. I took advantage of a One-Day-Sale at another store, thinking that their lower priced (and thinner) cookware sets would do the job. Nope, I returned it the next day. After coming across the positive reviews on the Emerilware set, I decided to shell out a little more money and try it, and I couldn't be happier. Yes, there is a learning curve when switching from nonstick, but I definitely got my money's worth.

So far I like this set of pans. For the most part I think the pans work great. I have not tried the small frying pan, yet so I cannot speak if it tips over or not. But the other pans have worked great. The only complaint my husband had was some food sticking to the pan while cooking (i.e warming up ravioli). The pan came clean without a problem, but it did stick. This says these are dishwasher safe, but the instructions to say for best results wash by hand and they seem to look better if you dry them off right away. The pans seem to be made really well and I hope that is an indication they they will hold out for some years.

Pro -Clad 12 pc set very good

First off I love Emeril Pro-clad the set. Very good deal for the price. You can pay much more for the all clad sets that are very similar, however if you are not a real professional chef I highly doubt you will notice the difference, nor think that its worth $1000.00+ for the set. I read plenty of reviews that talk about the small frying pan not being balanced and that it tips over. It is not true! I believe the reviews are confusing the regular Emeril stainless copper bottoms set with the Pro-Clad Tri-Ply set. Please be aware that they are two different sets. The copper bottom set is a little cheaper and I did notice the small frying pan is a little unbalanced because of the handle. The Pro-Clad set is not. The main difference is that the regular stainless set has a copper/stainless bottom only, not along the sides. The Pro-Clad set is Tri-ply with stainless/aluminum/stainless on the bottom and the sides of the whole pan/pot. After doing some research I learned copper heats up quicker, however aluminum retains heat better and more evenly. This makes the Pro-Clad set a better cookware and the same as the $1000.00 All-Clad, just slightly thinner. (Thus the price difference) The weight difference also balances the small fry pan so the Pro-Clad does not have a problem being balanced and does not tip over. If you like to cook or pretend to be a chef on weekends I highly suggest this set. BTW get "Bartender's best friend" cleaning product. All restaurants/cooks use it and it will keep your set looking like new. Good luck

Not nearly worth the price

Received this set as a wedding gift for our registry. We were very disappointed in its performance quality. First, the other reviewer is absolutely right about the small fry pan, if you put it on the stove, it will tip because the handle is so heavy while the pan base is not... i do not get this! I was annoyed with having to hold the pan to pan fry 1 egg.
Back to cooking 1 egg over easy, good luck with such a simple task with this set, the brushed stainless finish on the inside of the pan is impossible to clean and keep food from sticking to, maybe all stainless is like this? It seems like theres a bunch of micro-groves on the inner surface... I put a load of butter in the pan and still could barely keep an egg from sticking. If you plan to use lots of oil and fats in all of your recipes, yeah maybe you'll be happy with this set, otherwise, I would avoid it.
Also, as far as cleanup, these pans have never looked good since the day we got them, the stainless has almost tarnished to an ugly brownish copper color. The pans were both handwashed first (scrubbing to get food off) and then dishwashed. Even handwashing alone has left this discoloration.
All in all, the pan may last a while, but at what expense? If you like ugly brownish tainted stainless steel, lots of food sticking, scrubbing and soaking, and lopsided pans that may spill over on you, maybe then I would recommend this product for you.

I purchased the same set but with less pieces. The small saute pans' handle is so heavy that it tips when placed on the stove when I attempted to heat up some oil in it. The rest of the set takes forever to bring water to a boil and this was on a gas stove! I hate the aluminum clad bottoms! When I complained to the manufacturer, they told me to send back the pan that tips. I didn't bother to send it back because the cost just isn't worth it! Emeril shouldn't endorse such a cheap chinese made product! Wish I could get back the $169 that I paid for it!

We bought this cookware set four years ago. We knew we wanted stainless steel and did a lot of research online before we bought. We decided on this set based on construction, cost, and appearance. I have to say, it is one of the best purchases we've made. I love the glass see through lids, the stay cooler handles, and the even heat distribution for easy cooking. It is beautiful, still looks like new, and washes up easily. The cost for this set makes it a GREAT VALUE!

I returned my hard anodized cookware that we received as a wedding gift. It wasn't performing as well as it used to. BBB gladly exchanged my used set (I LOVE their return policy). I knew I wasn't going to get the same cookware and wanted to look into a lifelong set. This Emeril Pro Clad set was perfect for me. I was a little hesitant because of the maintenance of stainless steel, but I haven't had problems at all. I cooked a fried egg and scrambled eggs with no sticking problem! A little extra money was worth it for this set, since it will last a lifetime with proper care. Now to look into some good cast iron pieces. :)

I love this set. I grew up on my moms cookware. Until I found this set I had a hard time switching over when I moved out. Its very durable and is easy to clean. It's one of those sets where you know it will last a lifetime!
