A confectioner's dream

Other reviewers will tell you how great this sheet is for baking cookies. I'll tell you that this sheet is the only serious choice for baking French macarons. These are incredibly finicky confections to make, and it takes a long time to master them, but starting with the right baking sheet helps a lot. I've had great success with the Air Bake sheets when it comes to macarons, I usually end up with a nice pied, and a deliciously light texture with very few (if any) casualties. I'll be picking up another soon. Now all I need to worry about is my whisking!

I got 2 of these as wedding gifts. They're wonderful-- the huge size allows me to make so many cookies at once! They do, however, stain and scratch VERY easily that's their only downfall.

I don't like aluminum touching food

I'm extremely concerned with this product as Aluminum is a reactive metal. I have an old air bake that has a non-stick coating on it. I'm shopping for another one and would not consider purchasing this item.
